Spring
Birds chirping, torrents of water released by the ice, maple sap dripping into pails... all these sounds are signs that spring is here! At last, cold and snow loosen their grip to make way for milder weather. It is also the end of Lent and its privations, heralded by the Easter bells chiming. There is no better way to break fast than by satisfying one’s sweet tooth at the sugarhouse: “there are never too many people to taste the syrup”, claims a traditional Québéc song. Spring also includes the month of May, or the “Month of Mary” as it used to be called.
